The Story

The Finca La Laja farm in Mexico is three-generation family coffee farm owned by Hermilo Sampieri, close to the village of Huatusco in the state of Veracruz. The farm began in 1920 when Hermilo bought his first coffee plot in Huatusco. Eventually, his son, also named Hermilo Sampieri, joined the business and took charge of milling and exports.

Over the years, the family farms grew to four farms in Veracruz, including Finca La Laja. The name "La Laja" is derived from the name of a stone common in the region of Huatusco. Today, the farm is certified for its sustainable production with RFA and 4C.

Using water from the glaciers of the highest mountain in Mexico, this coffee is immersed in order to extract its caffeine content, allowing the green beans to maintain their flavour, a method called Mountain Water Process. As the water passes through a filter, the water can then be re-used. Truly a coffee that you wouldn't believe is decaf.
